Ok, so I gave up cheese and chocolate (and all sweets in general) for lent this year, as I have done for the last few years. I didn’t find it too difficult apart from the odd craving.
This year, eating chocolate again a strange thing has happened: I didn’t really like it! It tasted too sweet and artificial. Despite this fact I still ate an entire easter egg. I’m really happy that my body now knows what’s good and bad for it. Now all I have to do is not mess this up and keep eating chocolate and make my body like it again. 
So I’m officially over chocolate. This doesn’t mean I wont have the odd treat with chocolate in it though!
I honestly never thought I’d be here, I LOVE(D) chocolate and ate it at least once a day..and now I don’t need it anymore! I couldn’t be more surprised and happy.

I’m a firm believer that everyone should be able to spend time alone in public. I’m actually really comfortable being alone - I kinda find it empowering being able to go to the cinema on my own, or eat lunch on my own without having to be on my phone/listen to music/pretend I’m waiting for someone..to just spend some time with my thoughts and no modern distractions is a rare thing these days and I embrace it!

Hello cold weather, welcome back! I have missed you so much, along with the excuse to make delicious delicious soups. Soups were absolutely essential in getting me to learn to love veggies while I was cleaning up my diet.

Tonight, I’m sharing with you the TASTIEST soup you’ll ever have. It’s like having a bowl of cheese.

MBH’s Nomtastic Cauliflower Soup
Serves 4, 213 calories per serve. Definitely have it with some rye for dipping!

30g butter
1 large head cauliflower, chopped into small florets
1L chicken stock
100ml creme fraiche
Salt & pepper to season


Melt the butter in a soup pot until it begins to foam. Add the chopped cauliflower and cook for 5 minutes to start softening, but don’t let the cauliflower get too much colour.

Add the 1L of stock and bring to the boil. Once boiling, reduce to a simmer for 20 minutes until the cauli is nice and tender.

Turn off the heat and blend (I use a handheld blender in the pot) until smooth. Then add the creme fraiche and whisk through. Season as desired.

Easy peasy! AND SO TASTY. Oh my gosh. I just demolished my dinner.

Also - handy tip. This is the exact same recipe I use to make broccoli soup, but I replace the cauli with broccoli. Broccoli is a bit smaller, so you need to use more of it to stop the soup from being completely runny.

Chicken & Cashews in Lettuce Wraps (via Real Simple)

Time: 20 minutes
Makes: 4 servings.

Ingredients

  • 3 tbsp low-sodium soy sauce
  • 3 tbsp honey (or agave sweetener)
  • 2 tbsp canola oil
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 3/4-inch pieces
  • black pepper
  • 2 cloves garlic, finely chopped
  • 1 tbsp grated ginger
  • 1 bunch scallions, trimmed and sliced
  • 1 8-ounce can sliced water chestnuts, drained
  • 1/4 cup roasted unsalted, cashews (can be slightly chopped)
  • 1 small head Boston or other lettuce, leaves separated

Today’s Run

I felt absolutely awful from minute 1 of today’s run. I was ready to give up and walk the whole thing from the start, it’s amazing how a bad mood can affect your run (I didn’t even think I was in that bad a mood till I went running!) BUT I just kept telling myself ‘just get to that tree’ ‘just go another minute’ and i managed to talk myself through the whole run.

Despite all of this I beat all my personal bests today :D I think I felt so shitty and tired was cause I was running faster than usual and just didn’t realise it! Either that or I was running faster so I could be finished faster!
